What is a fermented hot sauce?

Fermented hot sauce is a hot sauce made by combining peppers, salt, and brine, and allowing the mixture to ferment. The fermentation process uses lactic acid bacteria (LAB) to lower the pH of the mixture, which preserves the peppers and prevents harmful bacteria from growing
